Tech Tracker: Saladworks debuts first ghost kitchen inside Kitchen United - Nation's Restaurant News

Saladworks has joined the growing number of brands turning to ghost kitchens to optimize off-premise sales.

The West Conshohocken, Pa.-based fast-casual chain has set up its first ghost kitchen operation inside a Kitchen United facility in Chicago. The facility allows the brand to enter the Chicago market without opening a brick and mortar restaurant.

A company representative told Nation’s Restaurant News that the brand is exploring more ghost kitchen options.

If so, the chain will have plenty of choices in major U.S. markets.

Kitchen United's River North facility, which opened last year, is among several rent-a-kitchen spaces opening across the U.S.

The shared commissaries allow established brands to expand their reach in new markets. Ghost kitchen facilities also house virtual brands, or restaurant concepts developed for delivery only. 

National and regional chains operating ghost kitchens at Kitchen United facilities across the U.S. include B. Good, Chick-fil-A, Dog Haus, The Halal Guys. Boston Market (coming soon to Scottsdale, Ariz.) and Naf Naf Middle Eastern Grill. The shared kitchen spaces are also home to several delivery only brands. 

Chick-fil-A also operates a ghost kitchen inside DoorDash Kitchens, a rent-a-kitchen facility in Redwood City, Calif. Like Kitchen United, it is designed for brands looking to expand their off-premise sales without opening a physical restaurant.  

Other branded ghost kitchen facilities include The Local Culinary, Reef Kitchens, Zuul Kitchens, Family Style and Cloud Kitchens. Pasadena, Calif.-based Kitchen United, however, is a leader in the growing space with facilities in Pasadena, Chicago and Scottsdale. Kitchen centers in Austin, Texas, New York City and Los Angeles are slated to open soon.

Over the next few years, Kitchen United plans to build 400 kitchen centers. John Miller, CEO of tech incubator Cali Group in Pasadena, co-founded Kitchen United in 2017.  Cali Group’s other investments include a tech-focused quick-service chain called CaliBurger, Miso Robotics (creator of the robotic fry and burger cook Flippy) and PopID (order and payment software powered by facial recognition).

Uber Eats pulls out of India

Ride-sharing giant Uber said it has sold its food delivery business to Zomato, one of the largest food apps in India. 

The all-stock transaction gives Uber 9.99% ownership in Zomato. As of this week, “Uber Eats in India will discontinue operations and direct restaurants, delivery partners, and users of the Uber Eats apps to the Zomato platform,” the company said.

The move comes as the rivalry among third-party delivery companies heats up with industry watchers predicting a shakeout that could lead to more consolidation.  

In November, Uber CEO Dara Khosrowshahi said the company would only invest aggressively into markets where the brand can “establish or defend a number one or number two position over the next 18 months.”

McDonald’s launches new career app

McDonald’s Corp. has launched a new career exploration app for restaurant employees, below.

“They can work with a career advisor, in real time, to plot a personalized educational pathway,” McDonald’s said.
